Prepare the rice (day-old) and cut the aromatics
Break up any clumps in the cooked rice so the grains are loose and separated and make sure the garlic and onions are finely chopped.
Cook the eggs
Heat a little oil in a cast iron skillet or wok over medium heat. Crack in the eggs, scramble gently until just set, then remove and set aside.
Sauté aromatics
Add more oil to the pan. Stir-fry garlic and onions until fragrant (about 30–45 seconds).
Fry the rice
Add the rice into the pan. Stir-fry on medium-high heat, pressing and tossing to ensure even heating.
Season
Add soy sauce, salt, white pepper, and MSG (if using). Mix well until the rice is evenly coated.
Combine eggs
Return the scrambled eggs to the pan and break them into smaller pieces while mixing.
Finish
Add chopped spring onions, give everything a final toss, and cook for another 30 seconds.
Serve hot
